Mushroom Wellness and Cooking

Mushrooms are a great source of nutrients and are known for their immune-boosting properties. Medicinal mushrooms are a particular subset of mushrooms that have been used for their therapeutic properties in traditional medicine for centuries. These mushrooms contain bioactive compounds such as polysaccharides and beta-glucans, which are believed to help improve immune function, reduce inflammation, and protect against cancer.

It's simple and tasty to incorporate these health advantages into your diet by cooking with mushrooms. Soups, stews, pasta, risotto, and other foods can all be made with mushrooms. They make excellent meat substitutes for vegans and vegetarians as well.

Here are a few simple yet delicious recipes that feature some of Royal Mushroom's medicinal mushrooms.

Lion's Mane Mushroom Soup

Lion's Mane mushrooms have a meaty texture and a slightly sweet and nutty flavor. This mushroom is believed to help support cognitive function and may even have neuroprotective effects.

  • 1 pound lion's mane mushrooms, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Instructions:

  1. In a large pot, sauté the onion and garlic until softened.

  2. Add the lion's mane mushrooms and cook for a few minutes until they start to brown.

  3. Pour in the vegetable broth and bring to a boil.

  4. Reduce the heat and simmer for 20 minutes.

  5. Remove from heat and puree the soup using an immersion blender or transfer to a blender and puree in batches.

  6. Stir in the heavy cream and season with salt and pepper.

  7. Garnish with fresh thyme and serve hot.

Maitake Mushroom Risotto

Maitake mushrooms have a rich and earthy flavor and are believed to have immune-boosting and anti-inflammatory properties.

Ingredients:

  • 1 pound maitake mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups arborio rice
  • 4 cups vegetable broth
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

    1. In a large pot, sauté the onion and garlic until softened.

    2. Add the sliced maitake mushrooms and cook until they start to brown.

    3. Add the arborio rice and stir to coat with the mushroom mixture.
    4. Pour in 1 cup of vegetable broth and stir constantly until the liquid is absorbed.
    5. Continue adding the broth, 1 cup at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
